1.) A box of sushi vinegar is stored next to the hand sink in such a manner that water from hand washing could splash on to this box and potentially contaminate the spigot from which vinegar is dispensed. 2.) A rolling bin of uncooked sushi rice was observed stored under the drain board of the 3 compartment sink. The rolling bin has an attached lid and is well sealed. |
1.) The PIC moved this box to a prep cart away from potential contamination. 2.) The Inspector and the PIC worked together to find a new section of the sushi kiosk to place this rice rolling bin. It is no longer expose to contamination from the 3 compartment sink. |
