Observed the following internal temperatures in the walk-in cooler at time of inspection prepped on 05/04: Deli Ham 48 F, Roast Beef 47 F, Chicken strips 48 F, Salami 48 F, and Pepperoni 48 F. Surface temperature of walk-in cooler was 48 F with probe gun and outside thermometer reading 48 F degrees at time of inspection. |
PIC discarded all food out of temperature at time of inspection. |

Walk in cooler observed with a thermometer reading on the outside of 48 F degrees. Manager documented that cooler was 37 F degrees at opening. TDA surface probe gun reading 48 F to 50 F degrees. Several food items in the walk-in cooler were out of temperature. Coolers should be 41 F degrees and below. |
