Firm writes the time for next cleaning on side of deli slicers in deli department stored at ambient temperature. Times written on slicers one and two were 10:51 and 10:38. No time written on slicer 3 and all slicers were in active use. Inspection began at 12:18. Kitchen employee stated that he cleaned two of the three slicers after returning from lunch at 10:40 and another employee cleaned the other at the same time. Firm must follow system for tracking slicer cleaning frequency and update times on slicer at time of cleaning. |
