Violation Status Observations Corrective Actions Violation Category Repeat
01 PIC present, Knowledgeable, Duties in 0
01 0080-04-09-.02(1)(b) Demonstration of knowledge out During instruction today, the PIC was not able to speak to the proper parts per million for the firm's 2 sanitizers. PIC also moved test strip during testing of Quaternary Ammonia sanitizer. I spoke to sanitizer and testing. Priority Foundation (PF) 0
14 Food contact surfaces; clean and sanitized in 0
14 0080-04-09-.04(6)(a) Food contact surfaces shall be visually clean. out Observed deli slicer stored clean with food residue and organic matter set up on the back of slicer blade. 14 0080-04-09-.04(7)(c) Hot water and/or sufficient chemical sanitizer; default time of 30 seconds in contact with utensils; see manufacture's instructions out Observed knife block with 00 ppm of Chlorine using mine and the firm's test strips. PIC remade solution that registered adequately. Priority (P) 1
14 0080-04-09-.04(5)(a)16 Sanitizer concentration shall be accurately determined out During testing of today's sanitizers, I observed the PIC place Quaternary Ammonia test strip into solution moving it around and also only placing into solution for 1 second during testing. Per Quaternary Ammonia sanitizer manufacturing instructions, test strip must be dipped for 10 seconds, not moved, and the correct percentage is between 200 to 400 ppm. Also, during Chlorine sanitizer testing, the PIC stated that 200 ppm was the preferred concentration for the firm's Chlorine sanitizer used inside of the firm's knife block. Per Chlorine sanitizer manufacturing instructions, test strip must register between 50 to 100 ppm. Priority Foundation (PF) 0
