#1- Kitchen Walk-in Freezer- Freezer is not keeping food in a frozen state and has allowed food to thaw above a frozen state, but still below 41 degrees. Using a state issued and calibrated probe thermometer, Breaded cheddar bites were thawed and cold holding at 28 degrees.
