1. )A coffee cup with a small amount of coffee was observed in a rolling full sized basket being used to transfer boxes of raw meat products from backstock to the retail shelves. 2.) An open water bottle was observed on a bakery prep table. An open package of cupcakes was on this prep table at time of observation. |
The PIC directed a meat department employee to remove her coffee cup from the department. The PIC threw away the water bottle in the bakery. Discussions were held with employees in both departments about not eating, drinking, or using tobacco except in designated areas. |

The hot holding table near the self checkout was scanned with an infrared thermometer at 101 degrees. Prepared chicken inside this hot holding unit was probed with a state issued and calibrated thermometer with rotisserie chickens at 120 and 130 degrees and fried chicken at 116 degrees. |
All chicken was removed from this hot holding unit and placed in a walk in cooler to chill for cold holding. Please see inspection comments for full details on why chicken was able to be chilled. |

The roller brushes on the first dock plate are extremely worn creating a gap larger than a ball point pen that could permit pest entry. The second and third dock doors have some damage creating gaps. The PIC states that repairs for these two doors have already been ordered and the facility has already order parts to complete repairs for these doors. |
