The PIC directed a meat department employee to remove her coffee cup from the department. The PIC threw away the water bottle in the bakery. Prepared chicken inside this hot holding unit was probed with a state issued and calibrated thermometer with rotisserie chickens at 120 and 130 degrees and fried chicken at 116 degrees. All chicken was removed from this hot holding unit and placed in a walk in cooler to chill for cold holding. Please see inspection comments for full details on why chicken was able to be chilled.
