I observed when asking PICs what processes they were using for food safety I was told both time and temperature. Also, during active questioning, I asked about food temperatures and the kitchen PIC stated that they use time and write the times on the food items once they are cooked and did not mention 'taking temperatures' which must be done before starting TILT, or time in lieu of temperature. I also observed that the kitchen PIC could not speak to sanitizer testing. It was noted today that firm did not have any test strips available and when asked about the firm's sanitizer parts per million rate the kitchen PIC stated that they were not aware of sanitizer testing. They stated that they can smell the chemical when it's the correct parts per million. |
