During manual ware washing, it was observed that food contact equipment and utensils were not being given sufficient contact time with chemical sanitizer at third basin of 3 compartment sink. Food containers, trays, etc. were observed being placed half-way in sanitization rinse and removed and some instances observed where personnel was only splashing sanitizer solution on utensils with hand before setting up to air dry. Equipment and utensils shall be submerged in sanitizer solution with a minimum contact time of 30 seconds to properly sanitize. |
Store Manager retrained personnel, and washed items were re-sanitized during inspection. |
