Observed retail hot peanut container with date mark of 06/21, and holding temperature at 144. PIC stated that the peanuts had been open on 06/21. PIC stated that at the end of each workday at approx. 09:00 PM the peanuts were turned off to cool, and moved to walk in cooler for cold holding. PIC stated that peanuts were returned to warming device the next morning, until they are all used.
PIC was informed of proper cooling procedure, less than 2 hours to get to 70F and then 4 more hours to 41F. When heated items are cooled, they must be reheated to 165F for hot holding the next day. |
PIC voluntarily discarded used peanuts during inspection. |
