Observed when PIC was testing sanitizer that they only placed test strip into sanitize for 1 second and tried to register the ppm. Per manufacturer's instructions, test strip must be dipped for 10 seconds in order to register the proper parts per million. |

Observed several individually wrapped cold TCS sandwiches made in house and stored in beverage cooler to be outside the temperature safe zone for cold holding using my probe thermometer. Average temperature was 50F. (see pics)
PIC voluntarily discarded all TCS items above 41F. |
