1.) A knife in the meat department and a knife in the produce department were both observed stored as if cleaned and sanitized with food matter still present on the knives. 2.) Four knives in the produce department were observed stored between the wall and a knife rack rather than stored in the knife rack. |
All of the knives observed that produced this violation were placed at the 3 compartment sinks in their respective departments to clean and sanitize. |

Several stacks of foam meat trays were observed on a rack above a meat department prep table contaminated with meat preparation cast off matter. These trays are in the meat prep room which is not refrigerated below 41 degrees. |
The PIC directed meat department employees to dispose of these trays. PIC and meat department lead will discuss ways to better store these trays to prevent contamination. |
