PIC and kitchen staff did not have knowledge of safe concentration levels for chemicals used in sanitizing food contact surfaces. Firm has in date test strips for both chlorine (Clorox Bleach) and quaternary ammonia (Members Mark), but were unclear as to which was used for sanitizing food contact surfaces. |
Discussed correct concentration for bleach water (50-100ppm) and quaternary ammonia based sanitized water solution (200-400). Instructed PIC and staff that TDA food guide with related information is hanging on wall across from 3 bay sink area. |
