In the kitchen, inspector observed electric mixer with mixing bowl that had dried organic matter and Gyro cooker with old debris visible. Pic said that equipment has not been in use for quite a while. |
Inspector suggested to completely clean and sanitize all unused equipment and cover to prevent future contamination. |

PIC when asked to demonstrate his sanitizing process, ran the dishwasher and using his and the inspector's testing strips tested below acceptable range at below 50 ppm. The test was run more than once. |
The PIC was instructed to use Bleach in a three compartment sink to sanitize until the problem was corrected. |
