Observed that PIC was not knowledgeable of sanitizer testing and process. PIC stated that test strip must be dunked for 20 seconds. Also, PIC was trying to pre-mix sanitizer in basin with water from faucet. I instructed PIC that sanitizer is already mixed when it comes out of the dispenser. I walked PIC through proper sanitizer testing and process. |

Using my probe thermometer, I noted several TCS hot dogs sitting out on the roller grill with an internal temperature of below 120F. There was no 'still cooking bar' present on the roller grill during today's inspection. PIC voluntarily discarded all TCS foods with an internal temperature of below 135F. |

Using my probe thermometer, I noted several containers of TCS creamer sitting out, inside of damaged creamer well with an internal temperature between 50 to 53F. Also, using my probe thermometer, I noted several food containers used in the prep table to have an internal temperature of 50F. The prep table is damaged, and PIC was advised not to use until it can be repaired. PIC voluntarily discarded all TCS Foods with an internal temperature of over 41F. |
