Observed that when I asked the PIC inside of the kitchen to make sanitizer that I noted they were adding 'water' to the already premixed sanitizer solution. PIC voluntarily dumped solution and was coached while making new solution that tested fine. I also observed when asking PIC to calibrate probe thermometer that they stated to place the thermometer inside of the 1st hot dog to get a calibration. I advised PIC to use an 'ice water bath' to ensure that it's calibrated (reaches 32F) before you use it to get internal temperatures. I walked PIC through proper thermometer calibration and noted that thermometer was not calibrated properly. Thermometer registered at 0F when placed into ice water bath. |

Observed several whole pizza's x 3, Chicken sandwiches x 2 with a discard time of 12:15 pm. Today's inspection started at 1 pm. PIC voluntarily discarded all foods that were 'out of time' during today's inspection. |
