Per manufacturer's instructions; test strips must register between 200 to 400 ppm. Also observed that PIC was not knowledgeable of thermometer calibration or how to calibrate the firm's probe thermometer. During today's inspection, the hand sink was blocked, and wastewater was dumping into the floor when ran, and I asked the PIC where they have been washing their hands to, and the PIC stated that they have been using the 3-compartment sink. 3 Compartment sinks are only to be used for washing, rinsing, and sanitizing dishes and utensils and only a Hand sink must be used to properly wash your hands.
