People present stated they were not in charge, just employees. I did talk to owner on the phone concerning the complaint and issues I found. Training is needed and more managerial control. They were not even aware of the cold holding temperature nor how to wash and sanitize dishes. |

items on the cold line were all running internally with a certified probe thermometer 45-49 degrees, upon checking the product came from the under counter cooler and evey thing in there was 50 degrees and cooler was 52. Everything in the under counter cooler and on the sandwich line must be disposed of. One of the lines is not working at all and thats where they had their sauces in bottles and they were 70 degrees internal probe and boxes state refrigerate after opening. All of those need to be disposed of. They already knew the line was not working and the under counter cooler and were still using it. Owner stated they had a work order in fior them. |
