Observed several plastic food grade containers stored clean with old sticker residue still set up on them. Also, I noted several serving spoons and ladles stored clean inside of a 'dirty' container. Firm is using drawers on the pizza prep line to store utensils but are leaving the drawers open during operation which is causing drawers to get dirty from old dough and flour used at firm. |

Observed fruit wash tested by PIC was well over 15.62 ppm using the firm's Lactic Acid Test strips. After mixing several batches of sanitizer it was noted that no water was being added using the dispenser. I advised PIC not to wash fruits using fruit wash dispenser until it can be repaired. |
