An employee stated that dishes are washed with the deli dishwasher only, which is hooked up to a chemical sanitizer. The sanitizer concentration tested at less than 25ppm for chlorine based sanitizer. Used dishes are not being properly sanitized at this concentration. |
Firm has a 3-bay sink and Clorox Performance Bleach available to make sanitizer water. An employee set up the sanitizer basin during this inspection, which was tested at 100ppm for chlorine sanitizer. Person in Charge agreed to rewash and sanitize all the dishes before use. |
