I observed several packages of raw TCS chicken legs in a retail chicken case with an internal temperature of 51F using my probe thermometer. The retail cooler registered at above 41F using my thermal thermometer. PIC moved all chicken legs and breasts to the Walk-in freezer until the retail cooler can be inspected. |
