The PIC asked if they could use the same test strips for Quat when testing chlorine. The firm is using both Quaternary Ammonia and Chlorine (for their knives) which are 2 separate sanitizers that require 2 separate types of test strips. I also noted that PIC could not give the thresh hold for hot holding during today's inspection. The PIC stated that their hot foods could be as low as 120F during active discussions today.
