Observed when asking PIC about checking sanitizer they were unable to decipher which sanitizer they were using. The PIC asked if they could use the same test strips for Quat when testing chlorine. The firm is using both Quaternary Ammonia and Chlorine (for their knives) which are 2 separate sanitizers that require 2 separate types of test strips. I also noted that PIC could not give the thresh hold for hot holding during today's inspection. The PIC stated that their hot foods could be as low as 120F during active discussions today. I walked PIC through different sanitizers and testing. |

Observed 2 packages of White Castle packaged hamburgers with "Keep Frozen" on the label sitting in the firm's TCS cooler soft and mushy to the touch. PIC voluntarily discarded foods during inspection. |

Observed Subway's Walk-in cooler door to be held closed with a loose bolt. (see pics). The door handle has broken and needs repair. The door is still adequately sealing, and no ice has built up on the door. PIC has placed a work order on issue. |
