Observed polish sausages to have internal temperature of 133 degrees F when checked with inspector's probe thermometer. Once checked PIC and inspector discovered roller grill was not on. Polish sausages were for retail sale at time. No time could be determined when polish sausages were placed on roller grill. PIC stated roller grill items are held by temperature and time. |
