Observed 5 Door Cooler unit to have an internal temperature reading of 50F with inspector's infrared thermometer. Observed the temperature reading of unit to be at 47F. Inspector then took internal temperature readings of TCS food items and found that unit was not keeping contents at 41F, or below which is the maximum limit for cold holding requirements. 3/4 of the cooler had to be discarded. |
