Retail cooler was reading 52.8F on thermometer when arrived at firm ad reading 52.7F at close of inspection. Checked commercially processed sandwiches with Thermal Gun and temperature reading was 55F-60F. Observed several packages with moisture buildup inside packaging and molded bread, asked manager to open and check internal temperature with TDA probe thermometer. Turkey observed to be 60.3F, Bologna observed to be 59.2F, BBQ sandwich observed to be 59.9F, Chicken patty flatbread 60.3F, Egg Salad 60.3F. Explained to Manager all items are required to be 41F or below in this display case. |
Manager removed 36 sandwiches from the cooler and discarded during inspection due to temperature abuse. |
