The following food items were observed to be held under 135 F. All temperatures were verified with TDA digital thermometer. Pork loin biscuit at 121 F, Pork loin and egg biscuit at 126 F, Sausage biscuit at 122 F, sausage patty at 127 F, and egg round at 117 F. |
PIC stated that biscuits had been in the hot holding unit for about 30 minutes. Biscuits were reheated to 188 F - 197 F during inspection. Sausage patties and egg rounds were discarded during inspection. |
