Observed at aprox. 15:00 all TCS food items being held in the deli hot box to be past their expiration times. (Example: Mac and Cheese Exp: 12:15, Fried Chicken Tenders Exp: 14:25, BBQ Boneless Chicken Wings 13:25) Deli Employee stated that they had just cooked the items and had forgotten to record the new times for them. Inspector found all items except for the buffalo chicken wings to be at appropriate hot holding temperatures when measured with inspector's probe thermometer.
Observed Fried Chicken Tenders to be past their four hours expiration time in the retail grab & go hot box. Tenders were produce at 11:30, observed them at 16:30. |
PIC voluntarily discarded buffalo chicken wings and fried chicken tenders. |

Observed wastewater pipe to be dispensing directly onto the floor at the bakery three compartment sink and not into the appropriate drain. There was no food preparation occurring in the area at the time of observing the violation. |
PIC had maintenance personnel fix the pipe before inspection was concluded. |
