Observed PIC make finished sanitizer that registered well over 200 ppm using mine and the firm's test strips. Additional water was added which brought the ppm down to 100 ppm which is what is needed. |

Observed several pieces of raw TCS chicken wings, thighs, and legs sitting in the 3-bay wash basin under ice water but it was not actively running to ensure that thawing is done evenly. PIC explained that they chill their TCS raw chicken before its cooked. I advised PIC that raw chicken can only be sitting outside of the cooler or freezer under continuously running water. PIC voluntarily discarded all improperly thawed raw chicken during todays inspection. |
