The mixer in the deli area, the Hobart chopper in the deli area, the meat cuber in the meat department and the meat saw in the meat department were all observed with dried food residue in the hard to clean areas. The cuber observed in between the blades, meat saw was on the wheel and pads, the mixer was the guard, and top area and the Hobart chopper was observed on the blade and in the bowl. As per team members these pieces of equipment had yet to be used for the day. |

The Team members in the produce department described the process of washing / cleaning dishes. The members stated they are washing and then rinsing- No sanitizer step is being performed. The team members were unsure if the sanitizer was working in this sink. Sink was tested and automatic delivery system for sanitizer is working and tested at the correct concentration. |
