Observed both deli slicers were stored clean with encrusted cheese and food residue set up on the back of blades. I also observed several bakery tips that were stored clean with encrusted old icing inside of them. Inside the Meat department, I noted several cutting knives that were stored clean with encrusted food residue still on them. PIC stated that they no longer use these knives. I advised PIC to remove any equipment or utensils that they aren't using to ensure all equipment is getting cleaned and used daily. |
