Observed plastic Cambro soiled with old pizza crumbs holding tongs for dispensing pizza, from yesterday (Wednesday, 02/11), in use for dispensing pizza today, Thursday, 02/12. PIC stated he changes plastic Cambro out every day or two. Discussed during inspection that utensils sitting in ambient temperature must be changed out or washed, rinsed and sanitized every 4 hours from first use. |
Cambro and tongs from previous day were placed in sink; a clean Cambro and tongs were placed next to pizza box for dispensing pizza during inspection. |
