Numerous items in ziploc bags in back room reach-in cooler observed being held in excess of 7 days and dates on bags observed with hold times between 14 days and 1 month. PIC stated that when he gets in a case of product he opens the bags and places them in a ziploc bag in back storage cooler. Discussed with PIC only holding for 6 days plus day of production. i.e. Hot Dogs opened 6/10 would have a 6/16 use by date.
