Observed Retail Hot Display Box temperature at 125F, as a result 12 slices of Pepperoni Pizza and 4 Chicken Biscuits were at a temperature ranging from 117F-125F. |
PIC voluntarily disposed of 12 slices of Pizza and 4 chicken biscuits that were being displayed below the required 135F or above.
PIC also turned the temperature thermostat up to achieve the required holding Temerature. |
