Observed in several departments (Meat and Deli) sanitizer bottles with a concentration of 100 ppm to 50 ppm using firms and inspector's test strips. |
Inspector discussed making sanitizer when it is needed in each department or throwing all sanitizer away before or after each shift to insure your concentration is adequate. |

All food was discarded by PIC. Inspector discussed 'not overfilling' bunker's with product because this can drop the temperature over a period of time. The cooler is still working effectively. |
