The small stand-up reach in fridge in the deli area was reading 60 degrees on the thermometer. State and Establishment Internal thermometers were calibrated in ice water and read 33 and 32.4. Internal temperature of TCS food items was between 49-56 degrees. These were sliced tomatoes, cheese and lunch meats. |
PIC discarded all TCS items above 41 degrees. |

Date marking was not observed on commercially sliced packages of lunch meats- PIC was using the use by date on the container. ***Ready to eat pulled pork serviced had a date on them of 7/17/23- This is past the 7-day date mark |
Discussed that lunch meats once opened are required to be date marked and used within 7 days- not to exceed the use by date on the container. These were voluntarily discarded. |
