Observed the following unapproved sources:
1. Cowboy Salsa (x9) located in the retail upright cooler. Product did not come from a TN permitted manufacturing facility. TCS foods not allowed under the TN Food Freedom Act.

The PIC removed all unapproved Cowboy Salsa from the retail cooler and placed in the back where it will not be for retail sale. |

Observed the following food contact surfaces, stored clean and not in-use, to be visually unclean:
*The PIC and employee could not disassemble the band saw table to thoroughly clean in the lower housing chamber. Dried encrusted organic matter was observed from the underside.
* The hamburger press (patty maker) dried yellow encrusted organic matter observed on back side of the food contact portion of the equipment.
*The small ROP packaging table "VacMaster' had dried yellow organic matter on the edge of the table and near the sealer.
*Thermometer in smoker was observed to have heavy build-up of dried encrusted food residue on probe of thermometer used for monitoring internal temperatures of cooking foods. Smoker was not in use. |

Observed the Quat sanitizer bucket, held within the meat cutting room, to measure below 150 ppm (0ppm) when tested with the store's Quat sanitizer test strips. Per Manufacturer's instructions, quat ammonium sanitizer should measure between 150-400 ppm. The sanitizer bucket was re-made and continued to test below 150 ppm with the store's test strips. |

1. No safe handling instructions on the raw alligator meat packages, and raw chicken egg cartons.
2. Quail eggs carton missing address of 'Beyond Organic," not classified, and no safe handling instructions.
3. Walk in freezer with no labeling of products for multiple crates (approximately 10-20) of various products. All stored food products need to be labeled; container labeling is in compliance. |
