PICs could not state the tracking system of cleaning these wares. Inspector discussed the need to come up with a system that ensures a complete wash, rinse, and sanitize cleaning at least once every four hours. |

Observed the Quat sanitizer bucket, held in Love's back prep room, to measure below 150 ppm (100ppm) when tested with the store's Quat sanitizer test strips. Observed the Sanitizer at the 3-compartment sink, held within the Subway's dish room, to measure below 150 ppm (0ppm) when tested with the store's Quat sanitizer test strips. Per Manufacturer's instructions, quat ammonium sanitizer should measure between 150-400 ppm.
Observed the Subway employee dip knife in the sanitizer solution, held at the 3-compartment sink, for less than 30 seconds (2 second dip). |
PIC at Subway changed the 3-compartment sink sanitizer and PIC at Love's changed the quat bucket. Subway employee submerged knife and containers in the sanitizer solution for a minimum of 30 seconds. |
