During general discussions, the following employees were unable to demonstrate knowledge: 1. Deli employee no knowledge during testing sanitizer concentration how long to hold sanitizer strip in sanitizer solution (employee said, 'I have no idea') and the proper sanitizer concentration (employee said, '500'). 2. Meat employee no knowledge how long the contact time (submerge in sanitizer solution) of the equipment/utensils should be in the sanitizer solution prior to air drying. 3. Observed produce employee wash, rinse, and sanitize knife with contact time of less than 5 seconds. Produce employee no knowledge of thermometer probe calibration. |
