Observed employee return from break and enter the prep area, don an apron and disposable gloves, and proceeded to open a pretzel package (no repackaging occurred yet) without first properly washing hands at the dedicated hand sink. Inspector requested employee to stop his task and to wash hands properly at the hand sink. No direct food contamination was observed. |

Observed bleach sanitizer, held within the 3-compartment basin, to measure less than 50 ppm (0 ppm) when tested with a Chlorine test strip by the PIC. Inspector confirmed result with own test strip. PIC noted he did not measure the bleach but free-poured and did not test prior to using. All wares drying on the drain board were sanitized with the suspect solution. |

Observed one box of candy and one box of ham sandwiches being stored on the floor within the walk in cooler. The boxes were assessed, and no moisture penetrated the cardboard and the food packaging was not compromised. The PIC noted they had a delivery and in haste stored multiple boxes in the cooler for temperature control. |
