**Unsanitary practices observed today. Employee was observed to be in active preparation today with chopped onions. Employee had a trash can pulled up to the prep table for easy sweeping of waste into the trash can. The trash can was observed to have no bag inside of it and the interior walls were observed to have heavy build-up of organic matter from top to bottom from previous usage. The trash can was not in contact with the cutting board but stored directly underneath. Immediate cleaning of the trash can was discussed along with using a bag liner. |
