Observed several slices of raw bacon stored in meat Display case, at the right corner, to be out of the temperature safe zone for Cold Holding using inspectors calibrated probe thermometer. PIC explained that they have been having issues with this case and maintenance has been out several times to repair. (All other raw meats inside reach-in display case were at adequate temperatures. |
All bacon was discarded during inspection. |

Observed commercial dishwasher inside the bakery to not be working properly after running through several cycles. The dishwasher only reached 120F using inspector's calibrated lollipop thermometer and did not register on firms hot water sanitizer test strips. |
PIC was instructed to do all washing in there 3 Compartment sink until this has been repaired. |

**Observed old food residue on table of covered but plugged in band saw. PIC explained that saw has not been in use for several months. |
Please insure all equipment is unplugged to deter someone from using it before its been properly put back into rotation. |
