The following food products were measured above 41F with inspector's probe thermometer: 18 small portion cups of ranch dressing measured 70F with inspector's probe thermometer. The original bottle, held within the walk-in cooler, 'Member's Mark Ranch and Dressing' states, 'Keep refrigerated after opening'. Observed in same kitchen cooler, breading for raw chicken to make tenders. Upon asking, PIC stated the breading mix has been used and raw chicken has touched the mix. *Observed raw chicken parts in a bowl of standing water measured 79F located on the 3-compartment sink wash basin. With the inspector's probe thermometer, the internal temperature of the raw chicken measured 78F. The PIC stated he was defrosting with warm water and the chicken was in the bowl less than one hour. PIC voluntarily discarded all products- ranch dressing cups, chicken breading mix, and raw chicken pieces. Priority (P) 0
