Items in the warmer table were scanned with an infrared thermometer at less that 135 degrees surface temperature. Several food items were probed with a state issued calibrated thermometer and were under 135 degrees internal temperature. Quesadillas 119 degrees, Chicken tenders 90 degrees. Hamburger 127 degrees. The PIC removed all items from hot holding to reheat to 165 degrees. The PIC also turned up the holding temperature of the warmer table. |

Three boxes of ice coffee were observed in the retail iced coffee dispenser date marked from 10/24/23 to11/20/23, 10/22/23 to 10/31/23, and 10/24/23 to 11/20/23. Two boxes of creamer were observed in the retail creamer dispenser date marked from 10/9/23 to 10/30/23 and 10/20/23 to 11/05/23. These items must be datemarked to disposed of 6 days after the date of opening. The firm is also being provided with the paperwork to apply for a variance for the iced coffee and the creamer to allow for longer than 7 day datemarking. |
