*Observed cut onions and repackaged bags of shredded cheese in restaurant walk-in cooler with no date marking. *Observed date marking on fully cooked and cooled ROP items (ex: chicken wings, half chicken, sliced brisket) for retail sale in small retail cooler with date markings of April 29 and May 5th. Discussed that ROP for extended product life is only allowed with an approved variance. Product will be changed to the regular, 7 day date marking system. |
