Observed that PIC could not speak to thermometer calibration and sanitizer testing. When testing there sanitizer; the PIC stated that he leaves test strip in solution for 20 seconds and was unaware of the proper ppm for sanitizer. Also, PIC was not able to calibrate probe thermometer. PIC was aware of freezing temperature (32F) but was unaware of how to calibrate thermometer if it was 'out of calibration'. |

Observed employee move from food preparation (cutting fruit) to use there phone, go into walk-in cooler, and return to food prep without a hand wash step or donning new gloves in between. Please insure that all employees actively engaged in food preparation to insure a hand wash step and put on new gloves before entering back into food preparation. |
