They were not sure of concentration or process. When instructing in these departments, the PICs stated either they had not been shown this or how to get the correct information about sanitizer testing. 14 0080-04-09-.04(6)(a) Food contact surfaces shall be visually clean. out Observed that the 1st and 4th deli slicer were stored clean with encrusted cheese and food residue set up on blades and guard. **Observed cheese residue inside 'not in use' cheese slicer chute making these areas open to contamination. Please insure this equipment is cleaned, covered, and unplugged if not in use that the moment or if its only used periodically. **After speaking with PIC inside the meat department; inspector noted both slicer and band saw were plugged, uncovered, and ready for use. PIC explained that the slicer and band saw are only used during peak business. Inspector discussed equipment cleaning and lock out/tag out procedures for equipment not in use. This equipment must not be operational, unplugged, or uncovered to deter use before its been cleaned and placed back into operation. Priority Foundation (PF) 0

PICS in these areas were not able to speak to the correct sanitizer concentration. Inspector got with PIC Mr. Joseph about getting additional placards from Ecolab to be placed above every 3 Compartment Sink inside firm to insure employees are following Kroger's SOPs.
