Observed acidified white rice on the sushi counter stored under an inverted large white rice mixing container. Upon asking, chef confirmed this rice was made yesterday, 12/17/2023, and acidified at 9:30am.
*Observed during record review, that PIC was not recording the time of discard/used for acidified rice. According to firm's HACCP plan, rice must be used or discarded within 10 hours of acidification. |
