Observed PIC inside the meat department could not speak to sanitizer testing. When asked about testing sanitizer and what sanitizer that they use; the employee stated that she is not sure and was unsure how to test. PIC stated that sanitizer should be at 100 ppm. Per manufacturer instructions, the rate must be 200 -400 ppm.
**Observed that employees inside the deli were unsure about cooling down there hot TCS products. The PIC stated that they place them into the display right after they are cupped up and taken from 135F Steam Table. Inspector discussed cooling times for TCS products taken from 135F temperature. (2 hours: 135F-70F) and (4 Hours: 70-41F) |
