Observed PICS inside the deli department could not speak to sanitizer testing. PIC stated that they leave test strip inside solution of 5 seconds. Per Manufactures instructions, the test strip should be held in sanitizer for 10 seconds.
**Observed PIC inside the Produce Department could not speak to Fruit Wash sanitizer or utensil sanitizer instructions or percentage once tested. PIC stated that he was unaware that he needed to check there sanitizer every time, before use.
**Observed PIC inside the Deli department was unaware of commercial dishwasher testing and test strips needed. |
