1. A cleaver used to chop chicken was observed in a tub with the chopped chicken with the handle touching the food. 2. Plastic deli cups were observed used as scoops in several different buckets of dry goods inside the firm including salt, sugar, and rice. Any scoops used in retail food service must be stored protected from contamination, must have a handle, and the handle cannot touch the food if the scoop is stored with the food. |

Several items that require temperature control for safety where observed stored at room temperature in the kitchen. Squid was scanned with an infrared thermometer at 61 degrees. The PIC stated that this was food that was being prepared for personal use. Discussed with PIC that food for personal use should be prepared when the firm is not serving food to the public. Additionally, it should be stored separately from food offered for retail sale. Jackets and other personal items were also observed stored in the kitchen. All personal items should be stored separately from food and equipment used in retail food service. |
