Observed TCS food items in open air retail cooler (cheese, butter, biscuits) to have internal temperatures ranging from 49-51F. All temperatures recorded with inspector's calibrated probe thermometer. Remaining sections of open air cooler had temperatures within safe parameters. |
PIC voluntarily removed all TCS items from retail open air cooler sections and disposed of them in outdoor dumpster. Bleach was poured on trash bags to denature and discourage looting. Packages for store credit had contents discarded and packages saved for this purpose. |
